Pickled Daikon and Carrot Salad "Namasu"

About the Recipe

Called "namasu" in Japan, this tangy, simple to prepare salad is eaten as a side dish at New Year. It's a fibre rich, healthy dish so why not enjoy it all year round? If you are a lover of strong pickles, leave the daikon and the carrot in the marinade overnight for the maximum effect.

Ingredients

330g daikon (white radish)


60g carrot


1 tsp salt


1.5 tbsp sugar


3.5 tbsp japanese rice vinegar

Preparation

peel & thinly slice the daikon lengthways, then cut into thin matchsticks


repeat with the carrot


put the daikon and salt in a bowl. mix & leave for 10 mins


now rinse the daikon lightly and give it a squeeze with your hand for 10 secs letting any liquid drain away


mix the sugar and rice vinegar in a bowl


combine the daikon & carrot in a bowl, add the sugar & vinegar mixture 


mix well and leave for 30 mins before eating
